Tray Bake Pizza
Use a bread mix as the base for this giant pizza and press it into a shallow roasting pan. Spread a jar of Loyd's Tomato and chargrilled Vegetable Sauce over the top and finish with cheese and other toppings.

Ingredients
500g bag of bread mix e.g. ciabatta style or sunflower seed
1 tablespoon extra virgin olive oil + extra for drizzling
1 teaspoon chopped fresh rosemary leaves, optional
1 jar Loyd Grossman Tomato Chargilled Vegetable Sauce
300g semi soft cheese, e.g. mozzarella or chevre or taleggio
a few good pinches dried oregano
freshly ground black pepper
Toppings, choose from:
1 small red onion, sliced thinly
1 x 300g jar mushrooms in oil, drained
1 courgette, sliced thinly
2 tablespoons capers, drained
50g can anchovies, snipped
3 tablespoon sliced olives
3 tablespoons pinenuts
How to cook it
1. Mix the bread mix according to pack instructions adding the tablespoon of oil and rosemary, if using, to the mix. Knead well until smooth, then roll out on a lightly floured board, as thinly as possible.
2. Place in a lightly greased shallow roasting pan, pushing it right into the edges with your fingers.
3. Heat the oven to 200 degrees C, Gas Mark 6. Spread the base with the sauce, taking it right to the edges. Crumble over the cheese and add other toppings of your choice. Drizzle with extra oil and scatter over the oregano and pepper.
4. Bake for 15-20 minutes until slightly risen and golden brown. Cool for 10 minutes then serve cut in squares.
