Awesome Aubergine Parmigiana

Ingredients
3 medium aubergines
about 6 tablespoons Extra Virgin Olive Oil
2 jars Loyd Grossman Sweet Red Pepper sauce
500g (1lb 2oz) mozzarella cheese, sliced
100g (3.5oz) freshly grated Parmesan cheese
salt and freshly ground black pepper
How to cook it
1. Slice the aubergines thinly.
2. Preheat the oven to 190C, 375F, Gas Mark 5. Heat half the oil in large frying pan and then fry the slices quickly on each side, in relays, adding and heating extra oil as required. As the slices are cooked, drain on kitchen paper towel.
3. Layer in an oven proof dish with the mozzarella, spooning over the sauce to cover the aubergine and sprinkling lightly in between with Parmesan. Finish with a layer of the two cheeses, spooning some of the sauce in between so that it cooks in attractive swirls.
4. Bake for about 20 to 25 minutes until hot and bubbling.
