Sizzling Fajitas

Fajitas are great fun to serve, and really easy to put together. Buy a pack of tortilla wraps, some fresh chicken, avocado, soured cream, salad and a jar of Loyd Grossman Tomato & Roasted Garlic Sauce.

Ingredients

Loyd Grossman Tomato & Roasted Garlic sauce.

1 pack 8 tortilla wraps, plain or flavoured

4 skinless, boneless chicken breasts

2-3 tbsp Extra Virgin Olive Oil

1 tsp ground coriander

1 tsp ground cumin

1 clove garlic, crushed

1/2 lemon, juiced & a little grated lemon zest

1 large ripe avocado

1/2 iceberg lettuce, torn

284ml soured cream

sea salt and freshly ground black pepper

How to cook it

Wrap the tortillas in foil and place in a low oven to warm through.

Halve, stone and slice he avocado and dress with lemon juice if liked. Separate and tear the lettuce leaves.

Cut the chicken into long tin strips then mix with the oil, spices, garlic and lemon zest.

Heat a large frying pan and add the strips of chicken. Cook for 5 - 10 minutes until just firm but not overcooked. Season in the pan.

Heat the sauce in a pan or the microwave. Serve immediately and let people build their own fajitas. First spread a tortilla with some sauce, then lay chicken strips, avocado slices and lettuce leaves on top. Drizzle over soured cream and roll up!
