Mushrooms with Baby New Potatoes and Spinach

Yellow curries are ideal for fish, vegetables and light meats. Potatoes are a popular vegetable in Thailand and this recipe is good for vegetarians or as a side dish.

Serves: 4

Ingredients

500g baby new potatoes

2 tablespoons sunflower oil

2 fat cloves garlic, sliced

2 shallots or 1 small onion, sliced

large fresh red chilli, sliced thinly, optional

250g whole button mushrooms

200g bag young spinach leaves

1 jar Loyd Grossman Yellow Thai Curry Sauce

sea salt and freshly ground black pepper

How to cook it

1. Boil the potatoes for 12-15 minutes until just tender. Drain.

2. Heat the oil in a wok and stir-fry the garlic, shallot or onion and chilli (if using) for 2 minutes. Then add the mushrooms and stir-fry for 2 more minutes.

3. Add the potatoes, stir and heat then mix in the spinach, stirring until cooked. Finally, pour in the sauce. Season, bring to the boil and simmer for 3 minutes.
