Creamy Courgette & Sundried Tomato Linguini

Sharp Parmigiano Reggiano cheese, rich double cream and sweet Mediterranean chopped tomatoes combined to achieve delicious layers of flavour.

Serves 2

Ingredients

1 Jar of Loyd Grossman Creamy Tomato and Parmigiano Reggiano Sauce
Fresh Parmesan
100 ml Double Cream
2 tbsp Loyd Grossman Sundried Tomato Pesto
150g Courgettes (halved and sliced)
80g Sundried Tomatoes (chopped)
2 tbsp Olive Oil
1 clove Garlic (crushed/finely grated)
150g Dried Linguini
A handful of Fresh Basil

Method


Step one

Cook the pasta as instructed in salted water. 

While the pasta is cooking, heat the oil in a large saucepan.  Add the courgette and fry off on a high heat until golden brown and cooked.  

Step two

Reduce the heat, add the garlic and cook for a minute, taking care to not burn. 

Add the cream and pesto, bring to a simmer and cook for 2 minutes before adding the jar of sauce on a medium heat, returning to the simmer.

Step three

Drain the pasta and add to the sauce along with the sundried tomatoes and basil. On a medium heat, stir in until the pasta is evenly coated and is piping hot.

Step four

Serve and top with grated fresh parmesan.

Tips

Pairs perfectly with Casarecce Pasta and topped with a generous helping of freshly grated parmesan.
