Creamy Courgette & Sundried Tomato Linguini

Method
Step one
Cook the pasta as instructed in salted water.
While the pasta is cooking, heat the oil in a large saucepan. Add the courgette and fry off on a high heat until golden brown and cooked.
Step two
Reduce the heat, add the garlic and cook for a minute, taking care to not burn.
Add the cream and pesto, bring to a simmer and cook for 2 minutes before adding the jar of sauce on a medium heat, returning to the simmer.
Step three
Drain the pasta and add to the sauce along with the sundried tomatoes and basil. On a medium heat, stir in until the pasta is evenly coated and is piping hot.
Step four
Serve and top with grated fresh parmesan.

Pairs perfectly with Casarecce Pasta and topped with a generous helping of freshly grated parmesan.
