Sundried Tomato & Basil Casarecce

Sweet, vibrant tomato and herby notes of basil come together to impart enticing layers of flavour.

Serves 2

Ingredients

1 Jar Loyd Grossman Pomodoro & Basil Sauce
2 tbsp Olive Oil
30g Fresh Basil (chopped or torn)
160g Dried Casarecce Pasta
2 tbsp Loyd Grossman Basil Pesto
80g Sundried Tomatoes (chopped)
Fresh Parmesan to finish

Method

Pairs perfectly with Casarecce Pasta and topped with a generous helping of freshly grated parmesan.

Step one

Cook the pasta as instructed in salted water. 

While the pasta is cooking, add the sauce and sundried tomatoes to a separate saucepan. Heat on a medium heat and set to the side. 

Step two

Just before you drain the pasta, add 2 tbsp’s of pasta water to the sauce and put the sauce back on a medium heat. 

Step three

Add the drained pasta and fresh basil to the hot sauce and stir in until well coated.

Step four

Serve the pasta, top with pesto and drizzle with olive oil before finishing with the grated parmesan.
