Wild Garlic, Spinach & Pancetta Gnocchi
Sweet Mediterranean chopped tomatoes, smooth Mascarpone cheese and wild garlic combined with delicious results.

Ingredients
1 Jar Loyd Grossman Pomodoro, Mascarpone & Wild Garlic Sauce
2 tbsp Olive Oil
80g Baby Spinach (wash/prepare as instructed)
75g Diced Pancetta (use smoked for extra flavour)
400g Gnocchi
Fresh Parmesan to finish
Method
Step one
In a large frying pan, add the pancetta and oil, heat up on a medium heat and slowly cook the pancetta unless nicely browned and crisp.
Step two
Turn up the heat and add the gnocchi and fry off.
Step three
Add the sauce (rinse the jar and add 100ml of water) and bring to a simmer. Cook for 3-5 minutes or until the gnocchi is cooked.
Step four
Take off the heat, add the spinach and stir in until wilted.
Step five
Served and top with freshly grated parmesan.
Tips
Pairs perfectly with Casarecce or Orecchiette Pasta and topped with a generous helping of freshly grated parmesan.
